Butter Chicken

How easy can it be? Last night I roasted a chicken and we ate about half of it. I deboned the leftover and made stock.

Tonight I came home, diced the leftover breast meat, threw it in a pan and dumped a bottle of Butter Chicken mix over top. Simmer about twenty minutes and it's ready to eat. the garnish is fresh from the garden. I always like that - it makes me ridiculously happy.

I reheated leftover quinoa and we had it on the side. A simple meal, good for pre-taekwondo practice; very heavy on protein yet easy to digest. The butter chicken was delicious - it's like candy to me. Very high umami factor.
