Easy Roast Chicken dinner


Takes about five minutes' prep. Turn oven on to 425f, cut up a beet, an onion, a couple of leftover potatoes from last night, and about seven mushrooms. Placed them in a roasting pan, chicken on top. Salt, pepper and a sprinkling of herbes de provence. Cook for an hour and voila. Instant rainy sunday dinner.
