Beef Stew

My leftovers theme continues today. Not sure where all these leftovers came from...

Anyway, I am using the slow cooker, into which I am placing a leftover roast that was dry-ish to start with. (It was bought at a butcher-challenged supermarket.)

I added a sweet potato, one yam, leftover potatoes from sunday night's chicken, and a bag of cherry tomatoes that I got for a dollar a bag - what a great deal.

I also threw in mushrooms and squeezed a lemon over top. I added thawed chicken stock to just cover the potatoes and yam. No need to spice. I'll taste it near the end of cooking to see if it needs any spices.

Place the dish in the fridge. Put it in the slow cooker tomorrow morning. I'll set it to come on around two pm, and it should be ready at 5. We can eat anytime after that and have hearty pre-taekwondo dinner. Hope it tastes good!
